Ingredients
- Bow tie pasta: 4 oz (125 g)
- Baby arugula: 2 cups (500 mL)
- Garlic: 1 clove, smashed
- Walnut halves: 2 tbsp, toasted and roughly chopped (30 mL)
- Grated parmesan cheese: 1 tbsp (15 mL)
- Extra Virgin 100% olive oil: 2 tbsp (30 mL)
- Salt: 1/4 tsp (1 mL)
- Pepper: 1/4 tsp
- White navy beans: 1/2 cup, canned, rinsed and drained (125 mL)
- Red pepper: 1/2, diced
Utensils
- Large saucepan
- Knife
- Food processor or blender
- Measuring spoons
Directions
- Cook pasta according to package directions. Drain and rinse under cold water. Transfer to a large bowl.
- Using a food processor or blender, pulse together 1 cup (250 mL) arugula, the garlic, walnuts, Parmesan, oil, salt and pepper. Process until smooth and toss with pasta. Stir in navy beans, red pepper and remaining arugula.
