Ingredients
- Boneless pork sirloin chops: 4, 1 1/2 lbs (750 g)
- Salt: Divided, 3/4 tsp (4 mL)
- Pepper: 1/4 tsp (1 mL)
- Olive oil: 1 tbsp (15 mL)
- Radishes: 4, trimmed
- Carrots: 2, peeled
- Celery: 1 stalk or parsnips: 2, peeled
- Olive oil: 3 tbsp (45 mL)
- Lemon zest: 1/2 tsp (2 mL)
- Fresh lemon juice: 2 tbsp (30 mL)
- Honey: 1 tsp (5 mL)
- Fresh chives: 2 tsp, chopped (10 mL)
Utensils
- Mandolin or sharp knife
- Large bowl
- Measuring spoons
- Large skillet
Directions
- Season pork chops with ½ tsp (2 mL) salt and pepper. Heat oil in large skillet on medium-high heat. Cook pork chops 3 to 5 min per side, or until pork is just cooked through.
- Meanwhile, using mandolin or sharp knife, slice radishes, carrots and celery root into paper-thin rounds. Then cut celery root or parsnip slices into matchsticks, if desired.
- In bowl, whisk together oil, lemon zest, lemon juice, honey and remaining salt. Stir in chives. Add vegetables and toss.
- Divide salad among 4 plates and top with pork chops to serve.
