Ingredients
  • Boneless pork sirloin chops: 4, 1 1/2 lbs (750 g)
  • Salt: Divided, 3/4 tsp (4 mL)
  • Pepper: 1/4 tsp (1 mL)
  • Olive oil: 1 tbsp (15 mL)
  • Radishes: 4, trimmed
  • Carrots: 2, peeled
  • Celery: 1 stalk or parsnips: 2, peeled
  • Olive oil: 3 tbsp (45 mL)
  • Lemon zest: 1/2 tsp (2 mL)
  • Fresh lemon juice: 2 tbsp (30 mL)
  • Honey: 1 tsp (5 mL)
  • Fresh chives: 2 tsp, chopped (10 mL)
Utensils
  • Mandolin or sharp knife 
  • Large bowl
  • Measuring spoons
  • Large skillet
Directions
  1. Season pork chops with ½ tsp (2 mL) salt and pepper. Heat oil in large skillet on medium-high heat. Cook pork chops 3 to 5 min per side, or until pork is just cooked through.
  2. Meanwhile, using mandolin or sharp knife, slice radishes, carrots and celery root into paper-thin rounds. Then cut celery root or parsnip slices into matchsticks, if desired.
  3. In bowl, whisk together oil, lemon zest, lemon juice, honey and remaining salt. Stir in chives. Add vegetables and toss.
  4. Divide salad among 4 plates and top with pork chops to serve.
