Ingredients
- Fresh strawberries: 6 cups, washed, dried, hulled and halved (1.5 L)
- Olive oil: 2 tbsp (30 mL)
- Aged balsamic vinegar: 2 tbsp (30 mL)
- Salt and pepper: 1 tsp each (5 mL)
- Arugula: 3 cups, loosely packed, washed and thoroughly dried (750 mL)
- Sliced mint: 2 tbsp (30 mL)

Directions
- In a large bowl, combine the strawberries, olive oil, vinegar, salt and pepper.
- Add arugula and mint to strawberry mixture. Gently toss to combine and serve immediately.
