Ingredients
  • Bow tie pasta: 4 oz (125 g)
  • Baby arugula: 2 cups (500 mL)
  • Garlic: 1 clove, smashed
  • Walnut halves: 2 tbsp, toasted and roughly chopped (30 mL)
  • Grated parmesan cheese: 1 tbsp (15 mL)
  • Extra Virgin 100% olive oil: 2 tbsp (30 mL)
  • Salt: 1/4 tsp (1 mL)
  • Pepper: 1/4 tsp
  • White navy beans: 1/2 cup, canned, rinsed and drained (125 mL)
  • Red pepper: 1/2, diced
Utensils
  • Large saucepan
  • Knife
  • Food processor or blender 
  • Measuring spoons
     
Directions
  1. Cook pasta according to package directions. Drain and rinse under cold water. Transfer to a large bowl.
  2. Using a food processor or blender, pulse together 1 cup (250 mL) arugula, the garlic, walnuts, Parmesan, oil, salt and pepper. Process until smooth and toss with pasta. Stir in navy beans, red pepper and remaining arugula.
