Ingredients
  • Fresh strawberries: 6 cups, washed, dried, hulled and halved (1.5 L)
  • Olive oil: 2 tbsp (30 mL)
  • Aged balsamic vinegar: 2 tbsp (30 mL)
  • Salt and pepper: 1 tsp each (5 mL)
  • Arugula: 3 cups, loosely packed, washed and thoroughly dried (750 mL)
  • Sliced mint: 2 tbsp (30 mL)

Directions
  1. In a large bowl, combine the strawberries, olive oil, vinegar, salt and pepper.
  2. Add arugula and mint to strawberry mixture. Gently toss to combine and serve immediately.
